Western Omelette

Ahhh the old west, it was famous for wild gun fights, saucy saloons, and of course, delicious egg-based meals. That last one might not be historically accurate, but take our word for it, this SPAM® Classic-filled Western omelette will give you just the giddy-up you need in the morning. Yee-ha!


  • 1 can of SPAM® Classic 340g diced
  • 4 teaspoons butter or margarine
  • ¼ teaspoon chili powder
  • 8 large eggs
  • 1 chopped large green capsicum
  • 2 thinly sliced medium onions
  • 4 tablespoons milk
  • ½ teaspoon salt
  • 2 tablespoons vegetable oil


  1. In medium skillet, sauté capsicum and onions in oil until lightly browned. Stir in SPAM® Classic and chili powder until well mixed.
  2. For each omelette, in bowl, beat together 2 eggs, 1 tablespoon milk, 1/8 teaspoon salt and black pepper.
  3. In an omelette pan or skillet, melt 1 teaspoon butter; pour in egg mixture. Cook over medium heat, pushing cooked edge of omelette to centre as egg sets and tilting pan to allow uncooked mixture to run to edge.
  4. When surface of omelette is set, spoon ½ cup SPAM® mixture on ½ of omelette; flip uncovered half over filling. Cook until bottom of omelette is browned.
