You can never say no to classic fried rice, and when there is SPAM® Classic in it, it will be gone in minutes! This quick and easy recipe is perfect for any night of the week.

Ingredients

  • 1 tablespoon vegetable oil
  • 1 brown onion, finely diced
  • 3 cloves garlic, minced
  • 1 can SPAM® Classic, cut into 1.5cm cubes
  • 2 carrots, peeled and diced
  • 3 cups chilled cooked white rice
  • ¾ cup frozen peas, thawed
  • 2 tablespoons soy sauce
  • Fried eggs, to serve
  • Spring onions, finely sliced, to serve
  • Dried chilli flakes, to serve

Directions

  1. Heat oil in a non-stick wok over medium-high heat and cook onion for 4 minutes or until translucent.
  2. Add garlic and stir fry for 30 seconds.
  3. Add SPAM® Classic and stir fry for 3 - 4 minutes or until edges begin to get crispy.
  4. Add carrots and stir fry for 3 minutes or until tender.
  5. Add rice, peas and soy sauce and stir until heated through.
  6. Serve immediately and top with a fried egg, spring onions and chilli flakes.
