Stuffed Fried Eggplant with SPAM® Classic

  • 1.

    Slice eggplant into pieces with 6mm to 8mm thickness, and then horizontally cut these sliced eggplant into half, but don’t cut all the way through.

  • 2.

    Slice SPAM® Classic into pieces, similar in size to the sliced eggplant, and stuff SPAM® Classic into eggplant.


  • 3.

    Option 1: Deep Fry

    Add some water into flour to make batter, add 1 to 2 teaspoon salt. Then dip stuffed eggplant into batter, then take them out and deep fry the eggplant until the colour changes.

    Option 2: Oven Roast (no need to prepare batter)

    Put the stuffed eggplant into oven, high heat for 10 to 15minutes, until the eggplant is cooked and turns soft on the surface.  

  • 4.Sprinkle cumin and serve.
